Abstract

ABSTRACT: The objective of this article consists in reviewing the behavioral indicators that permit the assessment of animal welfare in bovine cattle destined to meat production during the pre-slaughter stage. The pre-slaughter activities that the meat bovine is submitted inevitably involve stress for the animals, which affects animal welfare and has negative consequences in meat, such as weight loss, bruises, and DFD meat, affecting the quantity and quality of the produced meat. Furthermore the animal welfare represents nowadays an international trade requirement, therefore making it necessary to have an objective and effective system to assess this characteristic. Animal behavior indicates their physiological and mental state reason why behavioral indicators are being developed to determine the loss of animal welfare. These indicators can be based on the individual animals’ behavior, in the handler-animal interactions and the intra-specific relationships.
