Abstract

The relationship and relative weight of the in vivo and postmortem variables defining body composition of buffalo carcass was studied. Twentytwo buffaloes were used (16 males and 6 females) Murrah x Mediterranean crossbreed. The in vivo measures evaluated were Live Body Weight (LW) and measurements using rib eye area ultrasound (REA), gluteus medium thickness GMT, back-fat thickness (BFT), rump-fat thickness (RFT) while post-mortem measures were hot carcass weight (HCW), cold carcass weight (CCW), rear quarter yield (RQY) and front quarter yield (FQY). Analyses by descriptive statistics, correlation and principal components for the variables of the channel were performed. LW averages were 483±61 kg whereas averages for body composition measurements taking trough ultrasound REA, BFT, GMT, and RFT were 40±5,83 cm²; 6,4±0,58cm; 0,41±0,09 cm, and 1,0±0,20 cm, respectively. Carcass measurements HCW, CCW, CRY, and CFY were 243±35kg, 241 ± 34kg, 127 ± 19kg and 111 ± 15kg, respectively. Correlation between REA and HCW, CCW, RQY (P<0,01) and FQY (P<0,05) was found. BFT measurement was correlated to HCW, CCW, RQY and FQY. Considering the proportion of the explained variance two main components were selected that explained the 79% of the total variance, highlighting the importance of the variables LW, REA, RQY and FQY for the first component and the BFT and RFT variables that explained higher variation for the second component.
